Hi, we want to thank our customers with a coupon code, on a card that we would put inside the package with the order,
but we would like to avoid each customer using this coupon more that once. Could it be possible to move every customer,
once he's used the coupon, to another group where this coupon couldn't be applied?

A coupon can be applied to a group of registered users so that when someone assigned to the group signs in the coupon will automatically be added to the cart. They will never see the code used to add that coupon to the cart so if they are changed to a different group they would not be able to use the coupon again.
If you send the coupon code to them with the product they would know what the code is and would be able to use it again. (unless you make it a one time use coupon).
There is no way to exclude a coupon based on the group that the shopper is assigned to.
