Our ShopSite Pro 8.3 shopping cart calculates an additional 5% discount for orders $100 or more.

Is there a way to prohibit the above discount on certain products and to apply a custom discount to certain products?

No.

You could use different coupons and limit the products that they apply to but there is no way to exclude products from the discount schedule.
