No, there is no one file that keeps a list of attributes. The attributes
are specific to products and each product could have a separate list
specific to it. This is one advantage I noticed in ShopSite over some
other shopping carts that I have looked at.
If you have lots of products using the same list of attributes though it
is a simple matter to change all of them at once using the global Power
Edit feature in a Pro store. Just select the products you want to
change, click Power Edit, select the field for attributes ("Option Menu
Text" in 8.1 or "Option Finite Text" in 8.0 and previous) and click the
Global radio button and Proceed. Then just enter the list of attributes
and save and publish. If you have a manager store you won't have the
"Global" option but you can still use Power Edit to just display the one
field and copy and paste the list of attributes into the field for each
product. Note that you could also do this through an upload of the
database with very little effort.
