How do you change your language from English to French, once the account
is already setup?

In Preferences -> Locale. Note that only ShopSite v4.3 had a French
translation available. In all other versions where only English locale
variations are available, you can change the text on the store pages and
shopping cart screens by change the text settings in various places in
ShopSite, mostly in the Preferences -> Store Text screens.

Also note that any change to the Customer Language in Preferences ->
Locale will wipe out any custom text changes you have made in the
Preferences -> Store Text screens, replacing them with the defaults from
the new language/local you have selected, so if you have made a lot of
customizations there, be prepared.

So would it be possible to migrate back to Shopsite 4.3 from version 7.0?

I really wanted the whole thing in French.

There is no 'downgrade' to previous versions. If you had backups that
were made when (if) your store was v4.3, then you could restore from
those backups, however you would lose any changes and any new data (new
products, orders, etc) since that backup was made. If all you needed
from your current store was pages and products, then I guess you could
download pages and products, install a new v4.3 store (and install the
French language pack, which is a separate operation than the initial
install) then upload the pages and products into the older store, just
ignoring any new fields that might be in the v7 download files that were
not in v4.3. Seems like a pain when you can already translate everything
the shoppers see into French language yourself in the current version.
The only reason I can see to do this would be for merchants who don't
speak any English, otherwise you are missing out on a lot of new
features and improvements with the newer versions.
