One of the new additions to version 6.3 is show below. Where do you change
this in the back office? I would like to change it from sales@ontimemall.com
to On Time Mall Inc. but do not see where to do so.

Merchant E-Mail Display Name
A descriptive name can now be associated with the merchant/store e-mail
address. For example, instead of shoppers seeing From: orders@mystore.com on
their receipts, they could see From: My Store Orders Department.

You can set this in the Preferences -> Hosting Service screen, see the
help document for that screen (while on that screen click the red '?'
icon on the right-hand side of the navbar) for instructions.
