Only use Google checkout

I recently became aware that my merchant credit card company charges 3%+ when a customer buys and 3%+ again if I have to refund the customer. :( :( :( With Google checkout I can wait until I'm sure I can ship before accepting a payment. Why not dump the credit card company and use Google checkout and Paypal only??? :D Are there any advantages to keeping the merchant credit cards.

One advantage is that is what many customers expect. Someone who is not familiar with PayPal or Google Checkout might not purchase from you if they want to pay with credit card because PayPal (I haven't used credit cards with Google Checkout...I don't know if that is possible) doesn't make the credit card option possible. Someone may go to the PayPal site, see that they have to login, and leave your site.

It is my understanding that PayPal has similar charges for credit cards. They charge 3.1% (if I remember correctly) for credit card orders. I am not sure if they charge again if there is a return.

One option with a payment gateway would be to set it to authorize only. That way, the payment isnt process until you click "Bill Order." So if you have a lot of changed orders, or if you don't want to transfer the funds until the order is sent, you can manually choose when the payment is processed, and the 3% is charged. You set this by going to Commerce Setup > Payment > Configure Processor.
