Backing up the shopsite back office

We've done much shopsite customization in the back office (order system,
shipping, cart and so on) and although our ISP backs this up we would prefer
to be responsible for this ourselves since it is many hours of work.
We do not see an option to do this under Utilities or anywhere else. What
specific files do we need to back up?

If you want to back up all of your customizations, etc, back up your
store's entire ShopSite Data Directory (if you do not know where this
is, look in Preferences -> Hosting Service, it should be listed towards
the bottom).

Do not just back it up on the server, that won't do you any good if the
server's hard drive crashes or someone accidentally deletes everything
or something like that.
