Where can I see examples of the different gift certificate templates?

Do you mean how the page looks using the different templates or the code for the templates?

If you want to see how the pages look you could get a demos store from http://shopsite.com/demo.html#manage and change the theme to various ones and then look at the gift certificate screen. If you open the gift certificate screen in a separate browser window you can just refresh the screen after changing the theme since a publish isn't required to generate that screen. (To see how the link to the gift certificate screen looks on the store pages you would need to publish)

If you want to just look at the code you would use the Copy ShopSite Template option on the Merchandising > Custom Templates > Advanced > in the Gift Certificate Templates section and make copies of each of the template and then use the Edit button to look at them.

Maybe I'm misunderstanding something. I want to see what the customer will receive. Or is that the same regardless of the GC template used?

By "receive" i mean receive via email, not viewed on the screen

From the demo store you can create a gift certificate, specifying the To:, From:, Message, Amount, and email address just as a shopper would do and send it to yourself so you can see what they look like.

Since you can create a template for the gift you can make it pretty much however you want it too.
