Where do I look to fix this? I only have the US selected, but even if I select another additional country, im not seeing the drop down for the country in the checkout page?? Its odd.

Check to make sure that you have the country field as a pulldown list and not a text entry field. It may be that your payment gateway requires a special code instead of the country name.
Next contact your payment gateway and find out exactly what they are getting from ShopSite and what is missing. That may help you find what configuration option isn't set properly.
If that doesn't help please contact the company that hosts your store for assistance with this. If they are not a ShopSite partner and can't/won't help then you can purchase a support incident direct from ShopSite at: http://shopsite.com/support_pricing.html

I'm honestly not sure what changed. I know for a fact it wasn't anything on my end. We've been successfully taking orders for months and then bam, error.
Anyhow, I checked commerce setup > order system > checkout, and noticed "country - display / required" wasn't checked for billing or shipping address. So I checked that and it now works. I thought it odd since it's worked to this point and I'm only shipping to the US, but whatever the case - it's working again.

Error message-security
I know exactly what this error is because it's happened to me, and more than once.
Your gateway processor requires all the IP addresses that Shopsite can run from, as part of their firewall. If your gateway receives an authorization request from Shopsite with an IP address not registered, then, your request will be rejected by the provider and you will get the error you cited. And, if Shopsite starts working again, what happened is your host switched back to the server whose IP address is registered with the gateway.
This has happened to me twice, and, each time, the gateway tech support does an XML search on the IP address, then, they add it to their registry. They tell me that the easiest solution is to get all the IP addresses that your host has and register them all. I have asked my host for all their addresses, they respond to me like I'm speaking fluent Babylonian. They have no clue what I'm talking about and any tech support re: Shopsite is useless.
