How to change the default images directory

I would like to change the default image directory from "Media" to "Images", but I can not find where to make the change.

Does anyone know where I can do this?

ShopSite relies on the directory being called media and it cannot be changed. You could however create a symlinks for media and point it to a directory called images. That way when ever you are accessing something from media it would automatically be looking in the images folder but referenced by the media path.

I don't understand the symlinks thing. Is that a ShopSite setting, or a server thing?

This is a server feature. It would be similar to a shortcut in windows where the file/folder name really is just pointing to some other location.

You would need server access, probably as root, to create the symlink. Check with your host and see if they can create it for you. (note that this is for Linux, freeBSD, Solaris I don't think it works on Windows.)
