I would like to put a link on the header of all my store pages that says "My Account". I would like it to work like this, if possible:

If the shopper is not signed in, it takes them to a page that has the "Sign In" or "Register" links. But if they are already signed in, it should take them to their account page where they can update their info.

I am using custom templates, and I was wondering if there is a link that will do this for me? If not, how is the best way to design it?

Have you tried the tag [-- RegistrationSignIn --] on your pages? That is how it functions. Note that it must be used in the template itself and not in the Header/Footer text field under Preferences.
