Make it possible to place product into a Category, and then provide a tag for number of products in a category.

You can get the number of products that are assigned to a page/category, by using the tag [-- PAGE.NumProducts --]

Not what I meant. Product Category may have 3000 products, put page only displays what ever amount.

ie Product Category Fasteners 18,000 line items, only display 48 per page.

That is a ShopSite Pro feature called "Pagination." In ShopSite Pro you can go to Pages > Edit Page Layout, and specify the number of products you would like per page.
