Back Office Fields (versioning / privileges)

Nearly all of my clients are looking to add a store to their existing sites, rather than, rent-a-store and up and move their entire sites to a new host who "provides" SS.

Therefor, as a designer/developer, ideally, I'd like to style and program a template / store for a client and then hand it off to them - install it on their server, etc. But also be able to remove the fields in the back office that no longer need apply to the new template. Template colors, etc.

Basicly: Can I remove the fields in the back office that no longer need apply to the template I set up for a client. Template colors, etc.

I think I'd rather this as a separate version of SS(P), or on/off switch somewhere, or maybe a privilege system: admin - store owner - operator — very much in the same way this forum works. Right now, SS seems very much geared as a "shared host" or one for all version.

Is any of this possible now?
