We are looking at updating our shopping cart, and would like to start from one of the built-in templates.

One of our goals is to make the checkout very mobile friendly, so we need responsive design.

I've seen the list of built-in templates here:

but it's not clear which of these are responsive vs. not.

Is there a list of which templates have responsive/mobile friendly checkout pages? Would rather avoid loading each one in turn to learn this info...

All of the themes released in ShopSite 12 or newer are responsive. Note that the link you referenced does indicate what version the theme came with. The non-responsive themes are all listed under the Legacy section at the bottom of the page.
