We've experienced a few large fraudulent orders this year. Although I can
delete the order itself from the database, the amount is still being
calculated into reports. Is there any way to get these amounts out of the
report totals.

We use Shopsite Manager v. 6.0.3

No, the Reports counters cannot be edited, just reset to 0.
