How to Exclude Specific Products from Global Order Discount

We give an additional 5% discount for all orders $100 or more.

Is there a way to turn off this discount calculation for specific producsts
/ SKUs so that they don't get the additional discount?

No.

In ShopSite 7 with custom registration enabled you can apply coupons to
a group. You could create a coupon for 5% off on selected products when
the total exceeds $100 and apply that coupon to the default group. In
the coupon include all products except those where you don't want the
discount given. When a shopper registers they will automatically have
the coupon applied to their cart but it will only be activated if the
$100 limit is met. Note that the $100 total could include items to
which the discount would not apply.

You could also create such a coupon and put a link to it on the shopping
cart screen with a note that if the total exceeded 100 to click the link
for a discount. This would allow non-registered uses to get the same
discount.
