Amending inventory while customers are ordering

We use Shopsite 7. Our inventory seems to get inaccurate sometimes and I
was wondering if one cause may be us changing the inventory (adding,
subtracting) as the customers are shopping.

Sometimes we pull up several products to edit the quanity and leave it open
for 10 or more minutes. We adjust the inventory, then Save and publish.

How does this effect the quantity if someone is ordering at the same time.

The inventory quantity is checked when a shopper puts an item in their
cart to see if there are sufficient to fill their order, but it isn't
decremented until they finalized the order. If you have modified the
quantity on hand during this process it is possible for the quantity to
get out of sync. For example if when you start to change the inventory
there are 10 in stock and you want to add 5 making it 15. But if in the
mean time someone bought 3 that would reduce the on hand quantity to 7
not the 10 you saw. So when you add the 5 you should really have 12
but when you enter 15 and save the quantity is set to 15 so your
inventory would be off. So the quicker you can complete the process the
better for your inventory.
