instock/out of stock question

We have over 500 products and they sometimes come and go from inventory
depending on how good we guess our needs. Anyway, what methods do folks use
to manage items that are out of stock for a short while and put back?
One concern I have is what happens if someone puts an item in their cart,
comes back within 7 days, and in the meantime we have removed the buy button
from the more info page and removed it from all categories?
Also concerned if an item is removed from stock that has been picked up by
Google or another seach engine by product number (eg
/store/product222.html). If someone clicks on that item, it will take them
to that more info page. Is there a better approach than removing the item
from all category pages and removing the buy button from the more info page?
I want to have an easy way to keep the pages up to date.
