Is there a way to access the default product templates that come with
shopsite to edit them... where can these files be found?

In v6.x ShopSite you cannot modify them, and in pre-v6 ShopSite you
should not modify them (it is not supported and your changes will not
work once you upgrade to v6.x or greater). You can do most (if not all)
of the things the defaults templates can do in v6.1 custom templates,
and many more things can be done via custom templates that the default
templates cannot do. There are a couple ofsample custom templates in the
online documentation, but if you want to start with one of the built-in
ShopSite templates, create a test page, assign it that template, Publish
it, go to the resulting HTML page, save the source to your local
machine, and make it into a custom template by editing it and inserting
the custom template tags where appropriate.
