I was hoping that we would be able to edit the customer's email order
confirmation wording / format in ShopSite SC Pro V6, however, I don't see
that this is possible.

Is there a way to do this?

If you have Pro, you could write (or hire someone to write, if you are not a
programmer) a script for the OrderAPI that would create and send the email
receipts in any format you want, and turn off ShopSite's email receipts.
