How do I customize the emails received by both the customer and the vendor?

The merchant email receipt is not configurable within ShopSite.

You can add text to the bottom of the shopper's receipt in Commerce Setup ->
Order System, "Text at the bottom of the email receipt:" field.

You can modify some of the field names and other text strings in Preferences ->
Store Text -> Receipts.

The only way to get more custom than this is to use the OrderAPI feature in
ShopSite Pro to create your own receipts via your own custom program that would
be called by the thankyou.cgi when the order completes. If you do this, you
could turn off the ShopSite receipts entirely and send your own.

If you use the Stone Edge Order Manager for ShopSite to manage your orders,
you can create as many email "templates" as you need to handle common
situations. For example, you could have templates for "thanks - we have
received your order", "your order shipped today", "your order has been
delayed - it will ship on or about -", etc. You can have some messages
sent automatically - such as whenever an order is imported from ShopSite.
Also, any time you are viewing an order, you can click the Email button and
either select a template or type a free-form message. If you select a
template, the program will fill it in with the current order's data, then
let you review and edit the message before sending it.
