Disable order option

I know there is a way to disable an order option so customers cannot
select it (like for the first entry of "Choose -") but can't find it
on the forums.

Can anyone refresh my memory? I'm tired of having 2-3 customers a day
not enter a color/size - it's quite a hassle to call each one of them.
