Ian,
First you have to be using ShopSite v6 or greater to collect the CVV2 (AKA
Card Verification Value, AKA lots of other names too) code. Go to Commerce
Setup -> Payment, and click the Configure Processor button and you should see
the two checkboxes, one to enable the CCV2 field on the checkout form, the
other to make it a required field. The only processor that does not have this
option is Cybercash. If you are not using a realtime gateway, you are in Manual
mode, but you can still click the Configure Processor button and the only
options you should see there are these CVV2 options.
