If the product with the old name was in the backup copy of of the database it will still be there when you restore it. If you upload your new data (after you restored the backup database) and the product has the same name and sku but a different filename the file name will be replaced with the new filename. So if you remove the html file from the server and as you don't publish after restoring the database, until after you uploaded your new data, the old file name will not be recreated.
Note-1: ShopSite will not create the directory part of the file name so if you have the file name as either 2011-01/test.htm or 2011-02/test.htm you will need to create the 2011-01 and 2011-02 directories and give them proper permissions before ShopSite will publish to them.
Note-2: ShopSite will not remove an html page that exists if you change the filename of the page or moreinfo page during an upload of data.
Note-3: More recent versions of ShopSite (at least 10sp2) will remove the html page for a page / moreinfo page if you change the filename from the backoffice under Edit Pages or Edit Product.
