Why do I have several google-sitemap.xml created on my ftp namely: google-sitemap.xml, google-sitemap1.xml and google-sitemap2.xml? Will google properly crawl this? and each filesize is different. google-sitemap.xml has only 571, google-sitemap1.xml: 5,466,131 and google-sitemap2.xml: 1,971,685. Can I make it a single file?

Google has a maximum size file that they accept. ShopSite is breaking your submission in to chunks that google can handle. The smallest file contains information telling Google how to find the other files that make up the feed. The other 2 files contain the actual data feed.
