How do I edit colors on my email thank you receipt?

Right now my email receipt (currently setting up / testing) is coming through with BLACK text on a BLACK background. Not good.
Where can I go within the admin tool to edit this?
And / or just opt to send the email out without HTML, just plain text?

If you go to Commerce Setup > Order System > Thank You, the checkbox concerning email receipts in HTML should be at the top of the screen.

That worked perfectly. I do know CSS pretty well, so eventually I will attempt to make a custom template for it, but for now this is perfect.
