We may sell a 5 gallon pail or 55 gallon drum of a product that can not be shipped by UPS or FedEx.

Is there a method or work around to not calculate the shipping by weight or when you have to use a common carrier?

Under Products in the "Edit Product Info" there is a "Shipping and Download Information" section. Maybe something there will work for your situation such as add in a handling charge and zero out the shipping.

Another option is Lexiconn's Shopsite shipping module, which allows you to enable and disable specific shipping methods on a product-by-product level:
