registration where is the customer data stored?

I am wondering about the security of customer data for registered customers? Where is the data store for Shopsite?

It is stored (sensitive info encrypted) in the SQLite database that ShopSite uses for its data storage.

I'm wondering if I can remove a single field in that database (specifically, the payment information). We've reset our registration to not include payment information, and would like to delete the payment info that currently resides in our database.
