If you have ShopSite Pro you can enable inventory tracking and it will prevent shoppers from placing an item in the shopping cart once the quantity of available items reaches the out of stock limit. In 8.x and earlier versions of ShopSite it was possible for multiple people to add the same item to their cart if they did it while there was still an item in stock. The quantity on hand level was only reduced at the time the actual order was completed. This could give a slight possibility that the item could be purchased by more than one shopper if they had the item in their cart before the other shopper checked out.
In the latest version (9.0.4) a second check of the on hand quantity is made when the shopper goes to the thankyou.cgi and if the quantity has been reduced since the item was placed in the cart it will prevent the shopper from checking out.
Note that the item won't be deleted from your store pages it will just not be possible to purchase it.
