wrong language in shipping pull-down menu

HI. I need to change the language in one of the items in the drop down menu for shipping AND on the following check-out page. I've looked all over the site and I can't figure out where to make that edit. Can someone tell me where?

If this is a ShopSite shipping option, try under:
Preferences -> Store Text -> Shipping
