Is there any way that a customer can be given a choice of payment methods...

For example...
Option 1....Payment in full
Option 2....1/2 down and 2 monthly payments of 1/4 of total each month
Option 3....1/4 down and 3 monthly payments

The simple answer is NO. Although some payment gateways offer recurring billing there is not an option on in ShopSite to set this up. You would have to be using one of the payment gateways that provides the recurring billing option and then do the billing on the gateways interface and not on the ShopSite side.
