Specific merchant w/ ShopSite Starter v8

Hi all. I am trying to setup a shopping cart with ReadyHosting and they use ShopSite Starter v8. The have a list of "processors" to use, but my merchant, usa epay, isn't listed. So, my questions are, is the processor the same as the merchant? If so, can I use a merchant that is not listed somehow? If not, how can I link the processor and merchant? If it would be helpful to know the list of processors, please let me know.
