What output do you want?

Unless you have a payment gateway that can handle E-checks you need to
have the check in hand and process it through your local bank. I have
my site setup for check payments and used one of the Generic options
with just one field where I asked them to enter the check number they
will be sending. I also put in the text description the address where
they should mail the check. I then wait until I get the check before
processing their order. I have a relatively low risk for someone trying
to rip me off so I send the order when I get the check. If you are in a
higher risk situation you might want to make sure that the check clears
their bank before sending the order. A Money Order is a little more
secure than a personal check but it would be processed in a similar fashion.
