The general answer is no. The alt tag is associated with an image in a
file called .inf.<imagename> that is stored in the same directory as the
image. This file is what is edited when you Edit image attributes under
the Images section. When you use a tag like [-- product.graphic --]
the contents of this .inf file is what is put in the page source.
There is no connection between the product upload and the .inf file for
the image so there is no automatic way that this could be done.
Instead of using the template tags like [-- product.graph --] you could
build the entire html for the image using other custom template tags and
store the information needed for size, alt tag etc in the 5 custom
fields. This wouldn't necessarily be easy but it would be possible.
