You can't add just a hyphen to the search stoplist, but you can add hyphenated words like 'stop-list'. There is currently no configuration option to 'ignore' a hyphen or treat it like a whitespace character.
If your concern is that you have hyphenated words like 'stop-list' in your products that you want to appear in the search if the shopper searches for 'stoplist' or 'stop list', then you can include those other words (and any other kind of misspellings, brand names, etc, a shopper might use but that you don't want to include in the product name or description) in the product's Search Keywords field, which is a field designed for just this reason. The contents of the Search Keywords field is not displayed anywhere on the pages with the product, its only purpose is to allow extra words to associate with the product in the search.
