Dedicated SSL does not work with ShopSite 11.2

I was told by my web hosting provider (FatCow) that the dedicated SSL that I purchased from GeoTrust will not work properly with ShopSite version 11.2, and that I need to downgrade to version 10. Is this true, and if not, what should I do to properly sync my SSL with my ShopSite?

No, they are mistaken. The brand of SSL you get has nothing to do with ShopSite. It is more likely that they have just not set up the ShopSite 11 sp2 install yet on the type of servers that they would move you to if you purchase your own SSL. If ShopSite 10 will run there, there is no reason that ShopSite 11 sp2 wouldn't other than they haven't changed their processes yet to install 11 sp2. It can be upgraded to 11 sp2 (or even 12) manually, though, after the move to 10.
