How Do I Change Where the Admin Confirmation Email Goes?

Such a dumb question, but I can't for the life of me remember!

Preferences > Hosting services > Merchant e-mail address or
Commerce Setup > Order System > Email > Merchant e-mail address
Both do the same thing. One host blocked access to the Preferences > Hosting Services screen so we added the feature to the Commerce Setup screen also.
