I am sure the reason the publish finished when you had the search destination set to "none" is because no products were being indexed so it just had to look at the product and see that it wasn't to be indexed and it moved on to the next product.

I am working on another store right now that has 15K products and it has been generating the index for almost 25 minutes. I'm sure the reason is the store is on a shared server and the time allotted to the store is being limited. At least it is continuing to run and not timing out after 20-30 seconds like some servers do. The index just finished at 27 minutes.

So ask your host to remove any process time limit on your store if they will do that .

With the number of products you have you should look into a server just for your store.
