Any way to stop an order from having normal shipping if the price exceeds X? We have a currency based shipping matrix, but want to contact the buyer for shipping goods valued at over $3000.

You could write your own JavaScript that checks the order total and gives the customer a message if their order total is too high. The same JavaScript could be setup to stop the order.

One thing to think about would be to eliminate or soften the frustration that customers might experience when they are ready to purchase thousands of dollars of merchandise, only to get a message saying that they can't. You might want to have a friendly error message saying something like "Whoa, you have a very large order. We would like to offer you the best shipping rates that we can, but need to speak with you directly to coordinate shipping." and then give customers the option of a phone call or email. Email is nice because you could have your JavaScript form an email that has the customer's entire contents of their order to be included in the order so that you have that information without the customer having to re-order everything over the phone or email.
