I'm using SS Manager 11 to build my site GiftstoDeliver.
For my Checkout screen, I would like to add another box where customers can type a complimentary message for the gifts.
If I can't add another box, I would like to change the wording from "Comments / More Information" to "Complimentary message".

Only the Pro version of ShopSite has the ability to add custom checkout fields, which is what an additional box would be. In a Manager level store you can change the text "Comments / More Information" on the Preferences > Store Text > Checkout screen in the General section near the very top of the page.
