Making subproducts on more info page?

I sell a lot of candle fragrance on my site and right now I have a main product and then each size as subproducts all in a box for each Item. This takes up a lot of space and pages. I would like to list each item A-Z and have it so when you click the name it gives you the choice of 1 oz, 4 oz, 1/2 lb and 1 lb product to add to cart. I can't use the drop downs as they won't take the difference in weights for each size or has this changed since version 8? Can I do this?

Well I decided to make each fragrance its own page...Can I then use my HTML editor to create a table for say A-G and so on and then copy and paste the tables into text 1 on my fragrance page to make them show as a list? Lots of work but should also give search engines more to spider?
Am I on the right path?
