Changing from SKU to item number

Greetings:

I wanted to changed every occurance of where shopsite uses the identifer sku. In place of it, we will use
Item Number. Simple enough. To do so, I wanted to identify all the places where SKU is used.

Here is the list I came up with:

*Any page, product or include that uses it.
* Tags, such as the [-- SC_Cart --]. Here is where I think we run into problems. Correct me if I am wrong, but the tags are not editable. Is this correct or is there a way to change SKU to read item number.

Some customers don't understand what a SKU is. So we figure that using item number might make more sense to them.

So it is just the shopper-visible text 'SKU' that you want to change to 'Item Number'? Have you tried changing the 'SKU' text setting in Preferences -> Store Text -> Shopping Cart?
