The storeid is part of your store's authorization file and cannot be changed directly. You could get a new authorization file (There is a charge for doing this) with the name you want in it. However, that name is used as part of the encryption routine for data in your store so you would lose access to all payment information for orders that have been previously placed. You would also have to configure anything which uses an encryption routine such as Order anywhere links, Payment gateway settings, shipping settings etc. If you have customer registration enabled all customers would need to reregister since their password is encrypted and would no longer work. So changing the storeid is strongly discouraged.
The only place the storeid is visible is in the receipt to the merchant. It is never shown to the shopper. It is on the receipt in case the merchant has multiple stores as this give a way to determine which store an order is from.
